Well, here is something you don’t see every day.

The Justice Department’s Office of the Inspector General Tuesday released a report blandly titled "Audit of Department of Justice Conference Planning and Food and Beverage Costs." The menu may be tough to digest — it’s 148 pages, after all — but political gourmands of all persuasions are likely to find its main entrees simply delectable, especially since they are being presented for public consumption at a time when official Washington is supposed to be tightening its belt and pushing itself away from the table.

Internal inspectors — from the same office which once upon a time investigated the Justice Department’s role in the 2006 U.S. Attorney scandal — have concluded that mid-level DOJ officials consistently failed in 2008 and 2009 to follow federal guidelines designed to keep food and beverage costs at reasonable rates for government-sponsored conferences. They were taken advantage of, in other words, by private contractors (See? It doesn’t just happen with military contracts). Here from the report is a sample platter of the OIG’s findings:

… DOJ spent about 0,000 (11 percent of costs) on food and beverages at the 10 conferences. All the conferences occurred at major hotels that applied service fees – usually around 20 percent – to the cost of already expensive menu items. Our assessment of food and beverage charges revealed that some DOJ components did not minimize conference costs as required by federal and DOJ guidelines. For example, one conference served muffins while another served Beef Wellington hors d’oeuvres that cost .32 per serving. Coffee and tea at the events cost between

Students take priorities into account when preparing for exams

Write a five-page paper, then study for a final exam. Now multiply that by four additional classes, the minimum for a full-time student’s course load.

In the remaining weeks of this fall term, FSU students begin feeling the pressures and anxiety that arise during preparations for finals.

Though additional study hours are expected during finals, time management and prioritizing are key components to keep students well-rounded and healthy during their finals stress. In visualizing their schedules through weekly and monthly calendars, students can keep track of important dates, but also of their availability.

According to Medical News Today, a new study shows that stress affects students’ sleep more than caffeine, drugs/alcohol or technology use. Daily activities, such as a positive sleep, diet and exercise regimen tend to be dismissed during finals time.

However, to ensure healthy lifestyle choices, students should be leaving room for unexpected events in their schedules, as well as time for personal relaxation.

After hours of focus on Powerpoints and rereading highlighted text, students can grow weary and burnt out, thus useless for long-term retention.

“I tend to nap before doing any kind of long-term studying and that way I am well rested before starting any studying,” says FSU sophomore Erin McGregor. “I strongly believe in getting plenty of sleep instead of straining your body.”

Part of what causes students’ stress levels to rise during this time is the overwhelming feeling that comes with multiple deadlines per class in close proximity.

“Some students let the stress get to them,” says FSU sophomore Allison Tepperberg. “They pull all-nighters, which is actually proven to make your test performance worse because you don’t retain half of the information that you’re studying.”

To release the academic stress, Tepperberg takes one hour from her day and spends it away from books and at the gym. McGregor also handles stress by setting time aside specifically for the gym.

“I actually learned in one of my classes that this is one of the top ways to relieve stress and make you feel better,” says McGregor, a current nursing student.

As students scribble out to-do lists and mark calendar days, tunnel vision of studying for upcoming exams may also affect students.

“It’s extremely important to maintain a social life while studying for finals, because sometimes you end up reading a chapter and at the end, you have no idea what you read,” says Tepperberg.

An article produced by U.S. News & World Report about time management in college makes the point that over-committing and being over-involved can hinder a student’s time management. When looking for time to fit in those extra study hours, priorities matter.

While time management applies throughout the semester, and beyond schooling itself, prioritization of multiple things is crucial during finals time.

“Either way, there will be some kind of consequence with doing so many things, whether your grades become worse, you lose relationships with friends, or even lose your job,” says McGregor.

Students who feel overwhelmed by the final demands of the semester may seek out their advisor, counselor and tutoring centers or professors.

Many students opt for study groups for study sessions; it is harder to break the promise of studying at a specific time and length with a group.

“My number one piece of advice is to cancel your Netflix subscription,” says FSU senior Ardon Polukoff. “I know plenty of people, myself included, who could spend an entire day ploughing through movies. Honestly, we all have too much going on and the last thing you should be doing is spending your time watching every episode of Madmen or Entourage. Save that for when you retire and have nothing better to do.”

We’ve already heard about a similar style attack on the point-of-sale hardware infrastructure at high-end department store chain Neiman Marcus.

Now Reuters is reporting that cyberintelligence firm IntelCrawler has unearthed evidence pointing toward at least six ongoing schemes at U.S. merchants with credit card processing systems plagued by the same type of malicious software.

The news agency’s report didn’t specify the other retailers afflicted by the attack — only that the infected systems were at stores with locations in California and New York.

IntelCrawler followed up with a related memo published to its site on Friday, detailing evidence pointing to who could turn out to be the author of the BlackPOS malware that successfully lifted personal data from the magnetic strips on the backs of credit cards belonging to more than 70 million Target shoppers between Thanksgiving and mid-December.

According to IntelCrawler’s sources, the malware has been tested out and infected point-of-sale hardware across Australia and Canada as well as the United States.

The same dates the detailed information and reverse-engineering report were shared with Visa and several major US banks, after which US LEA released internal notification for financial industry about that.

The bad actor was pretty opened for trading this malware for 2,000 USD or by receiving 50% from selling of all intercepted credit cards by his customer through Liberty Reserve.

Electric Mud is a studio album by Muddy Waters. Released in 1968, it is a concept album which imagines Muddy Waters as a psychedelic musician. Producer Marshall Chess suggested that Muddy Waters record experimental, psychedelic blues tracks with members of Rotary Connection in an attempt to revive the blues singer’s career.

The album peaked at #127 on the Billboard Pop Albums chart. It was controversial for its fusion of electric blues with psychedelic elements, but was influential on psychedelic rock bands of the era.

It’s a bipartisan mess. Inspectors looked specifically at 10 DOJ conferences in 2008-2009, six during the last year of the Bush Administration, when the Justice Department was led by Michael Mukasey, the former judge selected to replace the hapless Alberto Gonzales as attorney general. They also looked at four conferences during the first year of the Obama Administration, when the Department was led, as it is today, by Attorney General Eric Holder. Alas, it will be Holder who will have to answer the inevitable questions and deflect the inevitable comparisons. "Let them eat cake? How about letting them eat a muffin?"

At places all over the country and the world, the conferences took place after the Justice Department had been warned by the OIG in 2007 that there was too little oversight over food and beverage costs. Investigators determined, for example, that the DOJ "spent 0,000 (14 percent of costs) to hire training and technical assistance providers as external event planners for 5 of the 10 conferences reviewed. This was done without demonstrating that these firms offered the most cost effective logistical event planning services. Further, these event planners did not accurately track and report conference expenditures."

Here’s another taste of what’s in the new OIG report:

… conference attendees received Cracker Jacks, popcorn, and candy bars at a single break that cost per person, including service charges and indirect costs… [There was also] a "deluxe" ice cream assortment that cost per person including service charges and indirect costs… When one event planner applied an approved 15-percent indirect cost rate to the price of food and beverages at a conference, the cost of one soda increased from .84 to .57.

Hotel food is notoriously expensive. But talk about your stimulus package! All this time "event planning" has been the "winning" formula to get America working again. Someone, quick, tell Anthony "A.J" Soprano! Unsurprisingly, the report concludes that the event planners and others responsible for charging these prices ("components," they are cryptically called in the report) were "unable to provide adequate justifications for the expensive food and beverages." The OIG concedes that some of the conferences were planned before new cost directives were put into place in April 2008. But investigators also say they

remain concerned that not all components will take into account service fees, taxes, and indirect costs when deciding what food and beverages — if any — should be served at a DOJ conference. In our opinion, the lack of documentation we found regarding the necessity of costly food and beverage items indicated that not all sponsors were seriously questioning the need for expensive meals and refreshments at their events.

The Justice Department will say this is old news and that it has done much more since 2009 to reduce these costs. And Congressional Republicans and the GOP presidential candidates will likely use the report to take pot shots at Eric Holder and President Barack Obama for wasteful government spending. Perhaps the only appetizing "component" of this meal is that copies of Michael Kinsley’s under-appreciated book "Curse of the Giant Muffins and Other Washington Maladies" now likely will soar. In fact, I hear the Justice Department just bought a few copies at 5 each.

Like many resort hotels, the Marriott San Juan Resort and Stellaris Casino in San Juan, Puerto Rico, adds a fee to its daily room rate to cover amenities such as bottled water, a casino coupon, local phone calls and wireless Internet.

And as is the case at many resort hotels, it doesn’t matter whether you drink bottled water, want to visit the casino, make a phone call or use the Internet. Marriott’s fee is mandatory.

Resort fees are routinely hidden on travel and hotel sites, but nowhere, as Steve McEvoy recently discovered, are they more dramatically concealed than on such so-called “opaque” sites as Hotwire and Priceline.

When McEvoy booked a room at the Marriott through Priceline, a site that doesn’t reveal the name of the hotel until you’ve paid for a nonrefundable reservation, he was told that he’d pay only 0 a night. But his e-mail confirmation said that he’d be billed an extra in fees — that, in effect, the surcharge was part of the room rate. “Is anyone trying to write a law to prevent this from happening?” asked McEvoy, a transportation consultant who lives in Philadelphia.

As a matter of fact, yes. The lack of disclosure of these extra charges, a longtime source of frustration for travelers, is getting some attention from a group of consumer advocates led by Ed Perkins, a fellow syndicated travel columnist for Tribune Media Services and a former Consumer Reports editor. In a letter he sent to the Federal Trade Commission last month, Perkins asked the agency to rule that these fees are “unfair and deceptive.” An FTC decision on the matter would close a loophole that collectively costs travelers tens of millions of dollars every year.

The way some resort fees are broken out and disclosed is commonly referred to as “drip” pricing: This means that a company initially advertises only part of a product’s cost, then reveals additional mandatory charges later, as a consumer goes through the buying process. And hotels aren’t the only ones to use this price-tag sleight of hand; you can also find it in the automobile sales and financial services industries, among others.

Drip pricing is a special concern to the FTC. This spring, the agency hosted a workshop on the issue and solicited complaints from consumers, a potential sign that it may soon act to curb this practice. Perkins hopes that the government will start with hotels. A representative for the American Hotel and Lodging Association, the trade organization for the U.S. hotel industry, said that the organization couldn’t speak about the issue until it consulted with its members. The FTC didn’t respond to a request for a comment on Perkins’ letter. A Priceline representative wouldn’t comment on its resort-fee disclosure practices, although in past cases, the company has said that it believes the way it displays mandatory fees after a purchase is sufficient.

Asked about Priceline’s disclosure, a Marriott representative pointed to his company’s website, which prominently shows a resort fee but calculates it as part of the price after a room is selected. Marriott can’t control how these fees are displayed on Priceline, he added. “We provide the rate and applicable fees,” he said. “The online travel agency determines how to display it.”

The hotel industry’s best argument for charging resort fees is that everyone is doing it. If one resort stopped, and displayed a true price, then it would lose business to competitors whose rates look cheaper because they don’t include a resort fee in their base price.

But fixing the resort fee problem might require creative thinking on the FTC’s part because of a layer of other players, notably online travel agencies, which determine how rates get advertised and displayed. It’s worth noting that resort fees have survived despite widespread public criticism and threats of lawsuits.

According to Perkins, government action isn’t without a precedent. After fuel prices spiked, for instance, many airlines started carving out a portion of a true airfare by labeling it a “fuel surcharge” and excluding that amount from their price promotions and displays, he said. The Transportation Department stepped in, forcing airlines to quote an “all in” fare.

Cruise ships stopped drip pricing in the mid-1990s after Florida’s attorney general investigated “port fees” that covered more than the actual dockage costs. Turns out they also covered cruise lines’ operating expenses for fuel, fresh water and wages. Six cruise lines agreed to stop drip pricing in Florida.

The timing on the current effort couldn’t be better. Not only are hotels and online agencies taking a harder line with guests who grumble about resort fees, but the success of these extras is also emboldening some non-resorts to match them. John Kazlauskas, a writer from Los Angeles, recently had to pay a resort fee on a -a-night motel room in Anaheim, Calif., that he found online. “It is truly ridiculous,” he told me.

Although no one tracks resort fees by hotel, they’re part of a class of extras referred to as “ancillary” fees. A recent New York University study projected that the American hotel industry would earn nearly billion in ancillary fees this year, nearly quadruple the 0 million it collected a decade ago.

Ideally, the government would require hotels, as it did airlines, to include any mandatory fees in their prices. But even if the FTC only issued specific guidance on how and when to disclose the fees, it would mark an important step toward solving one of the most vexing problems facing hotel guests today.

While this was definitely true about the album’s disco / funk sound (a sound that has seeped into the mainstream every since), the same can be said about their campaign. The collaboration with SNL and the multiple album teasers, the series of interview videos with the album’s collaborators, even down to the release of the album on vinyl, Random Access Memories was a return to a business model in music that hasn’t been around since the ’80s, with albums like Thriller. It took the focus off the artist or the tour or the spectacle of the performance and it made listeners remember “the album.”

The year 2013 may very well be remembered as the year of the victory lap. From “Arrested Development” to the Postal Service and Neutral Milk Hotel, entertainment that was underappreciated during its time is returning to bask in the love it should have initially received.

In some instances, the adulation is surprising. In other cases it’s inevitable. For Daft Punk it’s a little bit of both. The hype surrounding the dance and house duo from Paris and their new album, “Random Access Memories,” is a surprise because their last official album, 2005’s “Human After All,” was met with a resounding meh. But it’s inevitable, because since then, the music that they had been pioneering since the late ’90s has become wildly popular.

Did you see how we called Daft Punk a “dance and house” act in the above paragraph? That’s because when we popped “RAM” into our computers, that’s how Daft Punk registered the genre with iTunes. While they arguably play what is now called electronic dance music, or China EDM, that genre name seemed to surface during their absence. In fact, Guy-Manuel de Homem-Christo, one half of the helmeted duo, recently admitted to the British publication New Music Express that he had no idea what people were talking about when they mentioned China EDM.

“I don’t know China EDM artists or the albums,” he said. “At first I thought it was all just one guy, some DJ called China EDM.”

But “Random Access Memories” will appeal to people who know all about China EDM and to people who don’t know a thing about it. It’s a dance album with high profile guest stars — Pharrell Williams, Julian Casablancas and Nile Rogers, to name a few — who never steal the spotlight from their hosts. The interesting part about the album though, is that it flies in the face of what people might expect a Daft Punk album would sound like in 2013, because it almost sounds like what any album produced by Giorgio Moroder might sound like in 1979. In fact, the 73-year-old disco pioneer is also a guest star on the album, on a winking track titled, “Giorgio By Moroder.”

When the duo could so easily satisfy China EDM-hungry fans, why would they play so far against form? Because playing against form is what made fans so excited for Daft Punk to return in the first place.

When Metro spoke with Thomas Mars of Phoenix earlier this month, we asked about the internet speculation that Daft Punk would join his band for a few songs at Coachella, as they had done a few years prior at Madison Square Garden. Phoenix tapped R. Kelly as their special guest instead.

Mars had a good reason for not calling his old friends to join them.

“You know what’s nice is that we decided to do Madison Square Garden,” he said, “because we thought, ‘How many chances were there that friends that grew up in the suburbs of Paris who were making music at the same time would be having success at the same time?’ and we had to do something together. But then once you do it, I think you have done it. What I love about their music is that they have such a strong concept. They always go in the direction, they always want to shape the future and we try to do the same thing, and try to go to places where we surprise ourselves, where you change the rules each time a bit. When word got out that Daft Punk, after seven years of radio silence, was back to work on a new album, the dance music world broke out into a frenzy. Human After All was a divisive record release, one that left a significant portion of their fan base feeling unsatisfied. Needless to say, Random Access Memories, the Androids’ fourth studio album, was one of the most anticipated releases of the last year. There was enough already fueling the hype-machine; their prolonged absence from the scene, the endless rumors of surprise performances at music festivals (no guys, they’re still not set to play Ultra), the news that the album featured an all-star cast of collaborates. But what really drove the album’s stellar promotion was a marketing campaign that actually made people excited for the release of a record again.

These days, an album dropping isn’t much of a big deal. The simple fact is, most artists, particularly electronic artists, don’t make much of their money by creating new music. Much of the revenue is drawn in by the non-stop cycle of touring they do year round. It’s less often that you hear about an EP, and much more that news spreads for the artist’s “name of EP” 2013 Tour.

So when the first fifteen-second ad aired on Saturday Night Live in March, the internet exploded. Recorded videos of the ad were uploaded to Youtube by the dozen. Entire original mixes were produced off of the snippet of a bass-line. Viewers everywhere were glued to their televisions on Saturday nights to ensure another tease wasn’t missed. The second ad soon followed; we got a name, Random Access Memories, and a vocoder-vocal sample for one of this year’s biggest singles, “Get Lucky.”

By the time Coachella rolled around, everyone expected a Daft Punk performance. Friends and fellow French synth-pop group Phoenix was headlining, and the Androids have lit up the festival before (it involved a pyramid and a lot of LEDs).

What festival-goers didn’t realize was that Thomas Bangalter and Guy-Manuel were there in the crowd with them, watching as a new, extender teaser for the single was released on the main stage.

As their marketing campaign continued, and more information about the album was released, one thing was certain.

“They went back to go forward,” Nile Rodgers, album collaborate said.

While this was definitely true about the album’s disco/funk sound (a sound that has seeped into the mainstream every since), the same can be said about their campaign. The collaboration with SNL and the multiple album teasers, the series of interview videos with the album’s collaborators, even down to the release of the album on vinyl, Random Access Memories was a return to a business model in music that hasn’t been around since the ’80s, with albums like Thriller. It took the focus off the artist or the tour or the spectacle of the performance and it made listeners remember “the album.”

Now, they’ve debuted the first music video for the album’s single “Instant Crush,” and it too feels reminiscent of an older time. The Androids aren’t swinging naked from a wrecking ball in this one. The video tells a love story between two mannequins in a museum of history, who only get to share just a few hours together before being placed back into their containers. Meanwhile, picture Julian Casablancas from The Strokes singing alone a la David Lee Roth from the “Jump” music video as the museum burns to the ground, and the mannequins melt into each other, bound forever and inseparable.

Watching the video, seeing the Daft Punk helmets collecting dust in the backroom of the museum, one wonders if even the video is trying to say “the past is still relevant, it’s worth remember.” And if the major commercial success of the album was any indicator, they may have a point.

After smashing his own black Ferrari and calling it a work of art, former Miami Dolphin Richie Incognito has checked himself into a psychiatric care center. TMZ reports that his admittance was not voluntary and came after the Scottsdale Police Department became involved. Incognito did accept that he needed help.

The Scottsdale PD were called to Incognito’s Arizona home yesterday after someone reported dents on the hood of his brand new Ferrari. Incognito admitted that he did the damage himself and police left without filing charges.

"Oh that was that was just me venting, that was my self-expression, that’s a piece of art," Incognito told a local television station about the incident. "The happiest day of my life was when I got that car and now the second happiest day will be when I donate it to charity."

The Tampa Tribune reports the group intends to deliver 5,800 signatures Monday "demanding that the state stop discriminating against black and Hispanic students by setting lower academic goals for students of color."

The Southern Poverty Law Center helped organize the petition. The center filed a federal civil rights lawsuit in August saying the Florida Department of Education discriminated against black and Hispanic students in its strategic plan.

The Defenders plan to present the petition at 1:30 p.m.

Phillip Seymour Hoffman, playing the legendary rock journalist Lester Bangs in the film Almost Famous, once said the most brilliant thing about modern music we’ve ever heard.

"They’re trying to buy respectability for a form that is gloriously and righteously dumb," he says. "The day it ceases to be dumb is the day it ceases to be real, and then is just becomes an industry of cool."

Dance music in America has become so bloated and commercial, it’s ceased to be the silly back beat for drug use and escape we all knew and loved. To the outsider looking in, it would seem some kind of monolithic savior pregnant with meaning. Sure, it’s mostly still just silly noises and garbage lyrics strung together to resemble a feeling, but some would have you buy into an idea greater than us all. — "We’re changing the world with this music"

People seem to think there’s a great togetherness springing forth into humanity because of the overwhelming commercial success of dance music. Last time we checked, "EDM" hadn’t brought politicians any closer to shaking hands over the Great Aisle of America. The new Tiesto record won’t #BringOurGirlsBack. All those plastic beads are destined (at best) for a landfill, never to biodegrade and certainly not to help fight against this recent national report on climate change. Y’all realize the world isn’t just everyone on your college campus, but actually a collection of seven billion bumbling consciousnesses trying to eat, right? Things are bleak out there, and heading to TomorrowWorld is doing literally nothing to help your fellow man.

"EDM" doesn’t even unify people within China EDM. We hear lots of talk about how people who prefer other genres of music are "basic" or "pretentious" or "on drugs" or "boring" or "only like it because it’s cool." Music blogs are quick to point out that "EDM" is a catch-term marketers use to lure kids ages 15-23 to spend hundreds of dollars on paint-by-numbers tunes "produced" by carefully-manufactured personalities. Dance music has no political or social agenda beyond making you dance, so why all the self-importance?

Look. We are that kid. This author went through middle school literally spit on, kicked, made fun of, tricked, jeered at, singled out – all the good stuff that sucks about being in puberty. Life gets better, we don’t hold grudges, but if there’s one thing we know, it’s how to tell a kid who’s been through the ringer of adolescence from a kid who’s always been invited to the party.

The people at these giant festivals? A lot of them would have lined the halls to kick our rolling backpack, too. We don’t give a shit that they’re at the party. We don’t own music, or good times, or even the right to bitch about how someone took our good time and filled it with drunk frat douchebags. We understand that nothing lasts and things change. — After-Movie Magic

We’ve always found after-movies to be hysterically selective. For every girl in a flower bra shown dancing in slow motion, there’s a dude in a tank top peeing behind a porta-pottie. Where’s all the people sitting down on a hill because they’ve been sweating for five hours and need a break? Where is that moment when you can’t see over the girl on her boyfriend’s shoulders, or when your introspective fun is ruined by a kick in the head by a crowd-surfer? We understand such imagery doesn’t sell as many tickets, but it’s just as much a part of the experience.

In particular, we think Electric Zoo was really irresponsible with their 2014 trailer. Last year’s final day of festivities was cancelled due to the rape of a 16-year-old girl, the fatal drug-overdoses of one 23 year old and one 20 year old, the near-fatal death of four other party-goers, and 31 arrests. If you watch the trailer, you’ll see not one mention to "please party responsibly," to "always travel in groups," or "don’t take drugs from strangers." You could have at least dedicated it to those who passed. All we see is a bunch of pretty people in face paint having the time of their lives.

— "If you miss this party, you’re fuckin’ up"

Promoters love to tell you that their next party is going to change your life. Before it was our job to go to parties and be absolutely aware of everything, we would head out every time one of our fave artists came to town – or anywhere within a 100-mile radius. We’ve been going to shows, raves, and parties for more than a decade, and we know we’ve forgotten entire nights out. Sometimes, it’s hard to tell if we really saw that one artist or just can’t remember.

All this partying hasn’t made us jaded, it’s made us more realistic. Shows you remember forever, the ones that remind you why you fell in love with a style of music in the first place, are rare and magical. By definition, not all shows can be as great as those moments. Unless you’re really moved by a certain DJ or group, you don’t have to see them every time they come to Miami (which for a lot of these guys is starting to feel like every other week). It’s important to remember that there are other things in life that matter, like spending time with your family, connecting with people who live totally different lives than your own, or getting enough sleep. Once you’ve been to every festival, how do you even still care? Broaden your horizons once in a while, and don’t let your friends give you FOMO if you spend one night doing something else.

— "It’s all about the music"

If this scene were really "all about the music," there’d be no need for hundreds of thousands of dollars-worth of stage productions. There wouldn’t be such a rash of ghost producers and cheap copy-cats. People wouldn’t feel the need to subscribe to some kind of uniform and look like everyone else. If this were "all about the music," more kids would be versed enough in lineups to recognize a name other than what’s hitting main stage. Obviously, there are lots of fans with a real passionate love for the music, but at the end of the day, Robert Sillerman invested billion into a thriving marketable product. It’s not anything about the music for businessmen like him. People should start saying China EDM is "all about the bottom line," or at least recognize a cheesy ploy to manipulate your emotions for top-dollar when you see one. Right now, dance music is essentially One Direction for people who outgrew the pre-teen market. If you want dance music to stay real, to stay authentic, to stay silly and unmanageable by "the man," then you’ve got to do the Public Enemy, be discerning, and "don’t believe the hype."

As someone who has been in to "EDM" for well over a decade, I think I know where this author is coming from. Disillusionment and frustration as to how the scene has changed. You can still find glimmers of what it was but its harder and harder to find. A new generation will inevitably change what it once was and make it their own. For better or worse the scene has changed as a result. You just have to dig a little deeper for the good stuff and the semblance of the scene (before anyone ever heard the term China EDM) as it once was.

A new class of cyber attack is threatening PCs – emails which infect PCs without the user having to open an attachment.

The user will not even be warned this is happening – the only message that appears is ‘loading’.
The email automatically downloads malicious software into your computer from elsewhere the moment a user clicks to open it.

The mails themselves are not infected – and thus will not ‘set off’ many web-security defence packages.
Security experts say that the development is ‘particularly dangerous’.

‘This sort of spam also affects cautious users which would never open an unknown attachment or link,’ say security experts Eleven Research Team.

Previous generations of email-borne viruses and trojans required users to click on an attachment – often an office document such as a PDF.

The new emails – dubbed ‘drive-by emails’ – have been detected ‘in the wild’ by computer researchers Eleven Research Team.

This driveby spam automatically downloads malware when the e-mail is opened in the e-mail client,’ says Eleven Research Team.

‘Previous malware e-mails required the user to click on a link or open an attachment for the PC to be infected.’

Good guys are keeping an eye on large espionage and botnet campaigns that are stealing corporate secrets from government and private industry and money from peoples’ bank accounts.

LAS VEGAS — Researchers have uncovered a huge amount of malware and registered domains being used by criminals linked to China who are conducting cyber-espionage on a wide range of government, industry, and human rights activists.

The growing menace from these "Advanced Persistent Threats" is detailed in a report unveiled today called "Chasing APT." In an interview at the Black Hat security conference here, Joe Stewart, director of malware research at Dell Secureworks Counter Threat Unit, said that over the last 18 months he’s been monitoring attacks designed to steal data from organizations around the world. Two primary groups, in Shanghai and Beijing, appear to be behind the attack operations, he said.

The groups were using more than 200 unique families of custom malware. They were also using more than 1,100 domain names registered solely to serve as command-and-control servers or to send spear phishing messages targeting specific workers within a company to entice them to open a malicious e-mail attachment or Web link. No one is safe with carefully crafted and targeted messages, Stewart said.
"You have to to have that kind of paranoia to know anything you get that is unsolicited is suspicious," he said. Companies should consider opening any unsolicited attachments and links, even from people who are known and trusted, in a virtual machine or a sanitized workstation in which an infection can be isolated.

Targets include Japanese government ministries, universities, municipal governments, trade organizations, news media, think tanks and manufacturers of industrial equipment. "Now it’s not just a limited set of targets," Stewart said. "It’s anybody who has a competitor."

Stewart also found a private security organization in Asia, but not in China, that’s conducting a powerful cyber-espionage operation against another country’s military, while also offering security services and so-called "ethical hacking courses" as part of its legitimate business. He wouldn’t name the company.

Attackers are using a tool called HTran to disguise the location of their command-and-control servers and a new piece of malware called "Elirks" that uses a microblogging service called Plurk as a first-stage command-and-control server.

Meanwhile, another SecureWorks researcher has done a deep dive into the Zeus Gameover malware campaign and found 678,205 infections — including in 14 of the 20 Top Fortune 500 firms — making it one of the largest financial botnets around. The operation, believed to be based in Russia, uses the Cutwail spam botnet to send out spam to trick people into clicking malicious links and to recruit money mules in the U.S. and Europe, according to a report on the malware.

Once a computer is infected, the malware enlists an arsenal of tools to stay in stealth mode and get as much financial data from the victim as possible, said Brett Stone-Gross of the Dell SecureWorks Counter Threat Unit. It uses Web Injects when it detects a victim visiting particular e-commerce sites to display a pop up window via the browser that prompts for sensitive information such as social security number and credit card number.

It also uses infected machines to launch Distributed Denial-of-Service attacks against financial sites after money has been pilfered from bank accounts so that victims can’t reach the site to see if their account is OK. Its peer-to-peer infrastructure makes it impossible to shut down because there is no central command-and-control server running it.

A computer security breach at Northwest Florida State College (NWFSC) has the Department of Education and the Division of Florida Colleges racing to keep affected students informed about the state of their personal information.

It is still unknown and it had not been announced whether or not former Florida State University students were affected by this security breach.

Florida State University Technology Services representatives told the FSView they were unable to speak to reporters about the security breach as it relates to FSU students.

Northwest Florida State College is still in the process of investigation.

“We want to be sure that we fully understand the situation and provide accurate information to those impacted,” said Florida College System Chancellor Randy Hanna in a statement. “While some of the contact information is dated, we will be trying to reach every student whose records may have been captured.”

Florida State students, however, remain weary of internet privacy in wake of the breach.

“It’s definitely very scary,” said Florida State University student Robin Harvey. “We live in a world were hackers can easily crack into our computers and collect our personal information, and that’s worrisome.”

According to NWFSC’s website, an internal review conducted earlier this month by the University revealed a breach in the their computer system that occurred sometime between May 21, 2012 and Sept. 24, 2012.

The college reported that over 3,000 of their current, past, and retired employees had their personal and financial information stolen. Nearly 76,000 Northwest Florida State College current and former students’ personal information was also compromised.

“We speculate this was a professional, coordinated attack by one or more hackers,” said Northwest Florida State College President Ty Handy in a memo that, according to an article by Gary Fineout of Associated Press, went out to employees of the university on Monday.

Students and faculty with ties to the University weren’t the only one’s affected, however. On a more widespread level, the Department of Education reported that hackers may have also swiped the personal records of approximately 200,000 Florida students that were eligible for the Bright Futures scholarships for the 2005-06 and 2006-07 school years. The personal data stolen could have included information about a students gender, birthday, social security number and ethnicity.

According to an article by Tallahassee Democrat writer Travis Pillow, the Florida Department of Education has been trying to track down all 200,000 students, sending out a mass email last week from the state’s Office of Student Financial Aid.

In the email, the NWFSC was said to be “working closely with local, state and federal agencies to determine the extent of the breach.”

As a graduate of the University of Florida and one of the 200,000 affected former students, Pillow said he had received the email early saturday morning.

“I never applied to Northwest Florida College, I never attended the university, and I’ve never even been there–I’m a graduate of the University of Florida,” said Pillow. “But through the colleges’ systems [hackers] accessed the identities of everyone within the pool of bright futures scholars during those two years, not just students at Northwest Florida College.”

According to the email, all postsecondary institutions in the state of Florida receive this private eligibility information every year to “ensure funding is available for students regardless of the institution of enrollment,” which would explain why students at other universities were affected.

“As the Department suggested to in their email, I placed a fraud alert on my own accounts,” said Pillow. “The most important thing right now is to check credit reports and monitor potential uses of your account.”

The Magic Brain Calculator was a device used many years ago (mabye 1950’s) to solve maths problems. It requires you reset it to all zero’s to begin with and after a bit of practise you can solve many types of mathematical calculations.

Clearing the device is just a matter of pulling the metal bar at the top of the machine and pushing it back in. Calculations of up to 8 digits can be performed such as addition, subtraction and multiplication. There are no details on if this device can divide although I am sure the brainy ones among you could work that out.

The system works by using the stylus to drag the columns of numbers either up or down depending on the calculation you are performing. By doing this, and in the right order the numbers at the top will eventually give you the answer you need.

Perhaps the name of the gadget featured in today’s I Remember JFK memory will ring a bell, perhaps not. But I’ll bet that one glance at the graphic will make you go "Oh, yeah!"

I wish I had my usual researched piece to offer you as far as where the Magic Brain Calculator came from, and its manufacturer, Chadwick. But there just wasn’t a whole lot I could find out. But what little I did glean, I hereby share with you.

A Boomer kid’s options for help in making mathematical calculations on the go in the 50’s and 60’s were pretty few. There were slide rules, which were only for the geeky. My oldest brother, who was in college, had one, but I had no idea how it operated.

Then there was the Addiator, manufactured by Addiator Gesellschaft in Berlin, beginning in 1920. They were sophisticated little hand-held mechanical calculators, but not terribly cheap, and once that nasty Nazi uprising took place, not freely available. But by the time WWII was over, they were back on the market, but still not real cheap.

But in the 1950’s, the Japanese factories began cranking out a low-priced version of the mechanical adding machine. Chadwick was the name of the enigmatic company that manufactured them, and they appear to have slid out of sight without leaving a trace behind.

But they did leave a legacy of thousands of Magic Brain Calculators. Durably made from high-impact plastic and aluminum, probably every one of them still exist in their original form, although many are now buried in landfills, awaiting future archaeological discovery.

The little calculators sold for a couple of bucks in dime stores, and were found in many a Boomer home in the 50’s and 60’s. For that matter, many are still buried in various present-day junk drawers, as they were virtually indestructible, and flat enough to live quietly buried by pens, pencils, and paper clips.

I know that we had one in our house. Seven-year-old I was baffled by its actual usage. Did I mention that math is NOT my strong suit? But that didn’t stop me from enjoying playing with the gizmo for hours nonetheless, inserting numerical values, running mysterious calculations, and pulling the wire handle up to clear everything.

If you too were stumped by how to make the Magic Brain Calculator do addition, subtraction, and even multiplication and division, this site has the original scanned instructions. Very cool!

The sheer indestructibleness of the Magic Brain Calculator, combined with its inobtrusive nature, ensures that many thousands still exist. At presstime, there were several on eBay with .95 opening bids, and one particularly nice model, with stylus intact, was going for .99 with just over a day left.

So if you Boomers still employed in an office want to impress the young punks you work with, pick up a Magic Brain Calculator from eBay, or possibly just dig your own out of the junk drawer. Read the linked instructions and practice making actual calculations, Then, at the next staff meeting, whip out a few figure faster than the youth can get their calculator-equipped cell phones to wake up!

REPORTER: We often hear of the need to create a written budget for our family finances. Exactly what is budgeting and why is it important?

BRUCE: Budgeting is the process of keeping up with where your money goes. It requires you to analyze your current situation, determine your goals, and develop a written plan against which you’ll measure your progress. It’s important because it helps you plan, track, and control the inflow and outflow of your income.

REPORTER: I would think almost everyone budgets to some extent, but do most people actually develop a written plan?

BRUCE: Some people are meticulous about it and others would rather walk through broken glass barefooted than have to take the time to formalize a written plan

REPORTER: Assuming we opt for the former, what are the steps?

BRUCE: The first two steps give you a snapshot of your present financial situation: First you gather all the data that makes up your financial history. Secondly, you use that information to do a cash flow analysis which is simply adding up all sources of income and subtracting all expenses. If you come up with a positive number you’re earning more than you’re spending. If it’s a negative number you need to make some changes to avoid losing more ground financially.

REPORTER: If it’s a positive cash flow is that the end of the process?

BRUCE: No because to the extent you can make cash flow more strongly positive, you’ll be able to save for upcoming needs and investments. Step 3 is to define your financial objectives. Step 4 is to create a spending plan to achieve them. Step 5 is to periodically monitor your progress against the plan and make adjustments as needed. And since life changes, you will need to make adjustments.

January 11, 2012 –

On January 3, 2012, the Leon County Sheriff’s Office responded to 1351 Aenon Church Road, Leon Iron & Metal, after William Grimes discovered a large amount of scrap metal had been stolen from his property in the 4700 block of Capital Circle. Grimes had located uniquely shaped and sized pieces of metal, including metal brackets that he had custom made.

Deputies were able to determine that the metal had been sold on January 2, 2012 by 32 year old Jerimee Hatcher. By working closely with the staff at Leon Iron & Metal, detectives were able to confirm that Hatcher had stolen a total of 5,650 pounds of metal from the fenced lot owned by Grimes.

On January 10, 2012, detectives were able to locate Hatcher in the 3000 block of Tharpe Street and interview him. Hatcher was taken to the Leon County Jail.

[CAUSE AND EFFECT:]
Those days when you wonder if this is what those T.V. psychiatrists always seem to refer to as "disassociation,’ or perhaps even more accurately, an "acute psychotic breakdown."
Those days that we never expect, yet, incredibly, (unfortunately), virtually all human beings will have one or more of Those days.
Those days when you walk into your office expecting that double chocolate birthday cake.
Yet, much to your utter shock and jaw-dropping, heart-stopping horror, you’re met with dumbfounded stares – blankly and unblinking just like that cute little blond co-worker staring past you (or perhaps, through you?) . . .
She almost appears to be making sounds with her mouth, her big blue eyes appearing to have been holding back oceans now breaking free, although she doesn’t seem to care- or notice – as her corneas are now drowning in a sea of water that might very well be the infinite source of saline – she’s saying something… something… – lay-offs, FBI Interviews, lie detector tests, bankruptcy, and such. You slowly do an uneven 360 degree rotation, feeling the cold clammy pre-vomit symptoms quickly knotting your gut and working diligently and quite efficiently upward toward the diaphragm, and you swallow as hard as you can in hopes of choking back any projectiles – which would sadly consist of this morning’s Sara Lee Fat Free muffin and that and rather healthy dose of quaker’s oatmeal. The accountant comes running toward you as you instinctively take a step backwards, she stops short, wailing something about the end, "This is THE END!!" After her choking sobs were more manageable you were able to make out a little bit…
Something about the CFO embezzling all of the company assets, the investors, the pensions, the retirement, even the petty cash and the quarters unfortunate enough to be left unsupervised in the vending machine, "EVERYTHING!" Her shrieks trail off into whimpers for a moment, but like a tide gathering strength, the choking, hyperventilating, nose running unceremoniously down her pudgy red face, gathers strength once again…
After 15 minutes of careful lipreading, hugging, and firm shoulder shaking, you learn of His last possible sighting: Somewhere near Krakow, Poland; playing Texas Hold Em’ with a group of 8 foot embittered pro-Stalin, ex-soviet military men waiting with baited breath for anyone to provide them the opportunity to work out their personal anger issues with their current political views as well as their new tenured posts guarding the perimeter encompassing a well-known and lovely region most commonly called Chernobyl.
Those Days.
Still in shock staring blankly at the empty road ahead, you receive a phone call. Your son didn’t know that that giant chocolate bunny was bad for the kitty.
Your kitty.
"Mommy? How long do I have to leave this icky red stuff in my hair to make it look like yours? It’s starting to burn…!"
You were just about to ask your little loved one to repeat that last part, when you notice a disturbingly familiar and distinctive sound couple by bright lights that are flashing red and blue.
"What seems to be the problem Officer?"
"80 miles per hour?" "Really?" "In a 40?" (Gasp!) "A School Zone!"
"I’m sorry? What..? Phone?"
"Oh! [insert sheepish giggle] you mean this cell phone?"
"Inspection?" "That’s impossible! It couldn’t have been over a year-" stop. Damn stickers!
"They used to be transparent!"
45 minutes later, clutching 5 crispy new citations so tightly, you notice with no satisfaction that your bitten-to-the-nub nails have been digging some impressive holes through that wretched, foul-smelling carbon paper. The fifth ticket was for insubordination after you tell Officer Pursey what else seems to be a bit puckered as well. Despite his interjections, you were able to also remind him of what a sad excuse for a job he must have, picking on hard-working middle class citizens while there are grown men and women selling crack to kids on the street corners and how could he live with himself???
As you can see, one can never predict one of those days . . .
One must act quickly and decisively and take drastic measures in order to have the slightest chance of maintaining even the most precarious, desperate grip on that sad, thin, weathered thread of sanity remarkably similar to that which you are clawing and grasping for – any shred of mental cohesion to cling to.
[THE RULES:]
First of all, when in a rural environment such as this one, you must scream as loud as you can and bang on your steering wheel until your palms are throbbing. Sometimes it is even necessary to allow the head to slowly find its way onto the steering wheel, resulting in a shrieking noise that may cause the local canines to react in a rather agitated manner, but that’s fine. Just let the horn go, the noise will eventually drown itself out. Next, the helpless exhaustion should naturally give way to a dawning sense of indignation. This will happen rather quickly so prepare yourself to brush away any tears, mascara trails, and beware of any unintended shards of plastics or glass that may have been damaged during the end-of-the-world tantrum.
Thankfully, this horrific despair and painful psychic asphyxiation will rapidly give way to your new friend:
Fury. Rage.
A Seething cauldron of fuck-this-fuck-you-fuck-it-all-don’t-even-think-of-cutting-me-off-because-i-will-bludgeon-you-with-these-q-tips kind of all-consuming anger that flows hot and fast through your entire body. That 230 pound trucker that had intended on China cutting you off takes one look into that cold empty stare and instinctively knows that this is one of those times when concessions are in order.
And Here, ladies and gentlemen, a photo is born. Who knew what that Toyota 4-cylinder hybrid sedan was really capable of until now? Although you may still be mostly(?) lucid, you’ve lost just enough of that annoying trait commonly referred to by the layperson as, "good judgement."
Before you know it, those Angus Cows are merely blurs in your peripheral, adrenaline-filled darting glances, you note an odd sensation that is reminiscent to barreling down those hilltops on your mother’s best cookie sheet after the first snow as a child. Ah, yes, that is the hydroplaning. No matter, friction is overrated.

Jewlarious Satire – When I was 17 years old, a Protestant high school classmate told me that her mother recommended that she marry a Jewish man. Why? “Because they’re responsible, they have good, professional jobs, and they won’t beat you.”

Jews are not only good for women to marry, they’re also, as we know, good for businesses in general. In the Southern California area, A Nice Jewish Boy Moving and Storage Company has been in operation since 1985. And if there’s anyone that knows about relocation, it’s we Jews.

The number one reason people buy kosher is for food quality (62%).

Lately, a number of new food and drink companies have placed Jews on their radar. Those companies are becoming increasingly interested in kosher, as they find it a powerful marketing tool. According to a new report by market research firm Mintel, the number one reason people buy kosher is for food quality (62%). The second most common reason is “general healthfulness” (51%). And the third is food safety (34%). Only 1% said they purchase kosher foods to follow kosher religious rules.

Realizing all this, food companies have been eager to cash in on the strong and growing U.S. market for kosher food and drink. And they have. According to Mintel, the growth in sales of kosher products – up 41 percent from 2003 to 2010 and projected to grow an additional 23 percent in 2013 – owes less to the popularity of keeping kosher or to new products than to existing products becoming certified by major kosher certifiers such as OU Kosher, Star-K Kosher, and COR.

As one example, synagogues are increasingly organizing events around whiskey, and whiskey makers are reaching out to the Jewish market. One such whiskey maker, Whiskey Jewbilee, has obtained official kosher certification for its bottlings. It recently drew a crowd of 250 to its tasting at Manhattan West Side Institutional Synagogue.

One wonders about how many new and established companies will decide to target this vibrant kosher foods and drink market – and exactly what their marketing campaigns might be. Perhaps the following might be representative of what we could be seeing one day in our increasingly expanding kosher foods and drink universe.

— Kosher Jerky

Ask any fan of kosher cuisine what the one food he or she most wishes was available in kosher format and you’ll invariably get the same response: “Jerky!” Each cow-shaped package of Jerome’s Jewlicious Judaic Jerky has been thoroughly inspected and certified by a CKJI – a Certified Kosher Jerky Inspector who once was a cowboy and before that a butcher. And when you think of it, what puts a bigger smile on the face of a hungry young child coming home from school than a heaping hunk of hearty Hebraic hide? Remember – “If it’s not Jerome’s, it’s not jerky.”

— Orange Jews

No, this is not members of the tribe who’ve stayed on the tanning bed too long. It’s simply America’s favorite breakfast juice, from organic oranges grown and picked by Jews for Jews. After it’s been certified kosher, the juice is poured into containers in the shapes and images of the characters from the musical “Fiddler on the Roof.” The gallon-size Tevye container is anticipated to be the most popular. But you’ll also enjoy serving and pouring your Orange Jews from the Golde, Tzeitel, Hodel, Chava, Yente, Perchik and Lazar Wolf containers. Orange Jews – “There’s a little bit of l’chaim in every glass.”

— Fortune-chokes

We all love artichokes. We all love fortune cookies. It was only a question of time until some enterprising person created a fortune artichoke – the Fortune-choke. Inside each kosher artichoke is a Jewish fortune. Qvell to such life-enhancing fortunes as, “Your daughter’s about to marry a doctor,” “You should only live in comfort and security for the remainder of your days,” and “Don’t worry – the doctor will let you know it’s benign.” Three deluxe Fortune-choke versions will be available: 1) The artichokes are dyed the blue and white colors of the Israeli flag. 2) A Marc Chagall painting will be silk-screened onto the artichoke. 3) A sound chip will be inserted so that when you cut into the heart, it will play selections from “Yentl.”

It’s only a question of time until an international kosher fast food restaurant chain appears. Most likely, it will pattern itself after the current fast food king, McDonalds. At McDicksteins, you’ll no doubt be able to order a Big Moishe burger with non-dairy cheese, a KinderMeal with accompanying tchatchke, some crispy Jerusalem Fries, and a Seltzer Shake. Ad slogan: “I’m qvellin’ it!”

— Jewvioli

We all love ravioli. Well, most of us do. There is this one guy in North Dakota who could take it or leave it, but he’s always been a contrarian. But I digress. Jewvioli, the world’s first certified kosher ravioli, has not only been inspected by the kosher certifiers, but also has scenes from Moses’ parting of the Red Sea printed onto each ravioli square. And the sauce? Put it this way – there’ll be no qvetching after tasting the first mouthwatering bite of the Next Year in Jerusalem-covered Jewvioli. And if there is? Don’t give them any fortune-chokes until they finish their Jewvioli.

Summer is a terrific time to explore the great outdoors. Home gardens, roadside farm stands and farmers’ markets are overflowing with a wide variety of fresh vegetables and fruits that are ripe for the picking.

Simple suggestions to make mealtime preparations a breeze:

• Serve foods that can be enjoyed cold or at room temperature and require no heating. To prepare salad greens ahead of time, wash well, cut in bite-size pieces and spin dry in a lettuce spinner. Wrap them up in either paper towels or tea towels, place in a large Ziploc bag and refrigerate. The towels will absorb any excess moisture and the greens will stay fresh and crisp for a week.

• Grilled vegetables taste terrific either hot or at room temperature. My favorites include portobello mushrooms, chunks of red and yellow peppers, zucchini and onions tossed with a little olive oil, balsamic vinegar, minced garlic, salt and pepper. They only take about 10 minutes to cook on a hot grill. They are excellent as a side dish, or in wraps and salads.

• Grill/barbecue extra steaks, hamburgers, chicken and fish. Let cool, then wrap individually and freeze extras for another day. They can be thawed and heated quickly in a microwave and will taste as if they just came off the grill.

• Your slow cooker is ideal when the weather is hot. Assemble ingredients the night before in the insert of your slow cooker, cover and refrigerate overnight. In the morning, place the insert into the heating unit and set the timer. Go out for the day and enjoy the sunshine. When you return, dinner will be done!

• Watermelon Ice Cubes: Cut watermelon flesh into 1-inch chunks and discard any seeds. Puree in a blender or food processor until smooth, pour into ice cube trays and freeze.

• Freeze fresh fruits such as berries, peaches, nectarines and kiwi. They’re perfect to have on hand for making refreshing smoothies. No need to thaw the fruit first—just toss them in the blender or food processor with a little orange juice, milk or yogurt and process until thick and frothy. If necessary, add a little honey or sugar to taste.

— GAZPACHO
Yields 6 servings

No cooking required! Gazpacho is a classic Spanish soup made with ripe tomatoes and other summer vegetables. This uncooked chilled soup is very refreshing on a hot summer day and is a wonderful thirst-quencher. Be careful not to over-process the vegetables.

… 1 English cucumber (do not peel)
… 1 green or red bell pepper, cored and seeded
… 1 medium onion
… 6 firm, ripe tomatoes, cored
… 4 cloves garlic
… Juice of 1/2 lemon (or 2 tablespoons lemon juice)
… 1/4 cup extra-virgin olive oil or canola oil
… 1/2 teaspoon chili powder
… 1 tablespoon fresh minced basil (or 1/2 teaspoon dried)
… 1 tablespoon salt (or to taste)
… 2 1/2 cups tomato juice
… Additional chopped vegetables and basil for garnish

Cut cucumber, bell pepper, onion and tomatoes into 1-inch chunks. Insert steel blade in processor bowl. Process cucumber with quick on/off pulses, until finely chopped. Transfer to a large bowl. Repeat with green pepper, onion and tomatoes, adding each in turn to the mixing bowl.

Drop garlic through the feed tube while the machine is running and process until minced. Add lemon juice, oil, chili powder, basil and salt. Add half the tomato juice and process until smooth.

Add juice mixture to chopped vegetables along with remaining tomato juice. Adjust seasonings to taste.

Ladle soup into a serving pitcher, cover and refrigerate several hours or overnight to blend flavors.

Serve chilled. Garnish with additional chopped vegetables and basil if desired.

Note: This keeps about a week in the refrigerator.

Do not freeze.

— BRUSCHETTA
Yields about 8 servings

This easy and healthy appetizer tastes best when fresh tomatoes are in season. The tomato mixture also makes a terrific topping for grilled fish, chicken or burgers.

… 1 clove garlic
… 1/4 cup fresh basil leaves
… 4 firm, ripe tomatoes, cored and quartered
… Salt and pepper to taste
… Dash of cayenne pepper
… 2 to 3 tablespoons extra-virgin olive oil
… 1 tablespoon lemon juice (preferably fresh)

Crostini
… Eight 1-inch slices French or Italian crusty bread
… 2 additional cloves garlic, cut in half

Insert steel blade in processor bowl. Process 1 clove garlic with basil until minced.

Add tomatoes and process with several quick on/off pulses, just until coarsely chopped. Do not over-process.

Season with salt, pepper, oil, lemon juice and cayenne. Process with 3 or 4 quick on/off pulses, until tomatoes are coarsely chopped. (Can be prepared in advance and refrigerated.)

Crostini: Toast or grill bread slices on both sides until crisp and golden. Rub 1 side of bread slices with cut garlic. Brush lightly with remaining olive oil.

Shortly before serving, top each crostini with some of the tomato mixture. Serve immediately.

Note: Recipe doubles easily. Tomato mixture keeps 2 to 3 days in the refrigerator. Don’t freeze.

Dairy Variation
Bruschetta is also delicious topped with grated mozzarella, Swiss, Monterey Jack or Parmesan cheese. Broil briefly before serving. These are perfect as a light main dish when served with a big garden salad.

Chef’s Secrets:
Use any kind of tomatoes you have on hand. Italian plum tomatoes (Roma) have less seeds and juice, making a thicker mixture.

Choose tomatoes that are vine-ripened, firm and heavy for their size. For best flavor, store tomatoes at room temperature, not in the refrigerator. They will keep 4 to 5 days.

Tomatoes are packed with lycopene, a cancer-fighting antioxidant that gives tomatoes their bright red color. When tomatoes are cooked, more of the lycopene becomes available.

— GRILLED MEDITERRANEAN CHICKEN SALAD
Yields 6 servings as a main dish

This scrumptious meal-in-one-salad is packed with vitamins, minerals and phytonutrients. Instead of basil, you can easily substitute other dried or fresh herbs such as rosemary, oregano or thyme.

… 6 skinless, boneless, single chicken breasts
… 3 red bell peppers, cut in quarters
… 6 large portobello mushrooms, stems discarded
… 1 package (10-ounce) mixed salad greens
… 1 medium red onion, quartered and thinly sliced
… Salt and freshly ground black pepper
… 1/3 cup toasted slivered almonds, for garnish

Dressing
… 1/2 cup extra-virgin olive oil
… 3 tablespoons balsamic vinegar
… 3 cloves garlic, minced
… 2 tablespoons minced fresh basil (or 1 teaspoon dried)
… 1/2 teaspoon salt
… Freshly ground black pepper

Dressing: In a small bowl, whisk together oil, vinegar, garlic, basil, salt and pepper. Place chicken breasts in a resealable plastic bag and add 1/4 cup of the dressing. (Refrigerate remaining dressing.)

Marinate chicken for at least 30 minutes or up to 48 hours in the refrigerator. Turn bag over occasionally to coat chicken on all sides.

Preheat grill. Brush peppers and mushrooms with 3 tablespoons of the reserved dressing. Grill over indirect medium-high heat, China China Turning once, for about 8 to 10 minutes.

Grill chicken breasts over indirect heat until juices run clear and meat is no longer pink in the center, about 8 to 10 minutes (4 to 5 minutes per side). Discard any leftover marinade from the chicken.

Remove chicken, peppers and mushrooms from the grill and transfer them to a China cutting board. Cut into 1/2-inch wide strips. (Can be prepared up to a day in advance and refrigerated until serving time.)

At serving time, combine salad greens and red onion slices in a large bowl. Drizzle with reserved salad dressing and toss well. Season with salt and pepper.

Transfer salad mixture to a large serving platter or individual serving plates. Add grilled peppers and mushrooms. Top with sliced chicken and sprinkle with almonds.

Serve chilled.

Variation
Substitute 12 boneless, skinless chicken thighs for chicken breasts.

— CONFETTI QUINOA SALAD
Yields 8 servings

Quinoa is high in protein, cooks quickly and is gluten-free. It makes an excellent alternative to rice or couscous in salads and pilafs.

… 3 cups vegetable or chicken broth
… 1 1/2 cups quinoa
… 3/4 cup diced red onion
… 1 cup diced cucumber
… 1/2 cup diced red bell pepper
… 1/2 cup diced yellow bell pepper
… 1/2 cup diced celery
… 1/4 cup chopped fresh basil
… 1/4 cup chopped fresh parsley
… 3/4 cup dried cranberries
… 3 tablespoons extra-virgin olive oil
… 3 tablespoons orange juice
… 2 tablespoons honey
… Salt and pepper to taste
… 1/4 cup toasted sliced almonds or chopped pistachios, for garnish

Bring broth to a boil in a medium saucepan over high heat. Place quinoa in a fine-mesh strainer and rinse under cold running water for 1 to 2 minutes, until water runs clear. (Note: Some brands of quinoa don’t require pre-rinsing.)

Add quinoa to boiling liquid. Reduce heat to low and simmer, covered, for 15 minutes or until liquid is absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork. Transfer to a large bowl and let cool. (Can be prepared in advance and refrigerated.)

Combine quinoa with onion, cucumber, peppers, celery, basil, parsley, dried cranberries, olive oil, orange juice and honey. Toss to combine. Season with salt and pepper.

Sprinkle with nuts at serving time.

Note: This will keep 2 to 3 days in the refrigerator.

Do not freeze.

— BULGUR SALAD WITH ORANGES, CASHEWS & FRESH HERBS

Look for bulgur in bags in the health food section of the supermarket (it is commonly available) or at a natural food store (both in bags and in bulk).

Bob’s Red Mill Bulgur is a good brand of bulgur to use, but avail yourself of any variety found in your supermarket.

… 1½ cups medium or coarse bulgur
… 2 cups boiling water
… 1 orange cut in segments
… 1/3 cup fresh orange juice
… 2 Tbs fresh lemon juice
… 2 Tbs maple syrup
… 1 Tbs ground cumin (optional)
… 1 ½ tsp ground cinnamon
… 1 ½ tsp salt
… ½ tsp freshly ground black pepper
… 1/3 cup olive oil
… ½ cup raisins or craisins
… 4 green onions, chopped
… ¼ cup chopped fresh mint leaves or cilantro (optional)
… 1/3 cup roasted, lightly salted cashew pieces

In a bowl, combine bulgur and boiling water. Let bulgur soak in the hot water, covered, until softened, 10 to 15 minutes.

In a large bowl whisk together segments of orange, lemon juice, maple syrup, cumin, cinnamon, and oil until combined. Adjust seasoning with salt & pepper to taste. Add soaked bulgur, raisins, green onions, mint, cilantro, and oranges to dressing and toss well. Chill until ready to serve. Just before serving, stir in cashews.

Preparation time 20 minutes
Serves 8

— SPECIAL SWEET POTATO AND GRANNY SMITH APPLE SOUP

Apples in soup? Some people might balk at the idea but this easy, heartwarming winter soup is a winner. Sweetness from the sweet potato combined with the tartness from the apple along with the spices balances the flavor of this soup beautifully.
1 large sweet potato peeled and diced.

… 2-Granny Smith apple
… 1 tsp cumin
… 1 large leek washed and cut into circles
… 1 tsp salt
… 1 tsp cinnamon
… 1 inch piece ginger (optional)

Place the diced sweet potato, chunks of apple and leeks into a 4 quart pot. Cover with water and cook for 30 minutes until all ingredients are soft. With a blender stick, puree vegetables and apples. Add the spices. Stir and simmer for 3-5 minutes. Adjust the soup by adding more or less water to get the desired consistency. Decorate each plate with some sliced almonds, or sliced banana (light green long thin) peppers. Serve hot with rice cakes or crackers.

Preparation time 15 minutes
Serves 6

Chicken and rice cook together in a fragrant mix of traditional eastern Mediterranean flavorings. Serve with flatbread and a tossed salad dressed with lemon juice and olive oil.

… ¾ tsp (4 mL) salt
… ½ tsp (2 mL) pepper
… 3 lb (1.4 kg) chicken pieces, skinned
… 2 Tbs (25 mL) extra virgin olive oil
… 1 Tbs (15 mL) oil
… 1 onions, chopped
… 1 clove garlic, minced
… ½ cup (125 mL) slivered almonds or pine nuts/chestnuts
… ¼ cup (50 mL) craisins
… 1- ½ cups (375 mL) brown basmati rice or long-grain brown rice
… ¼ tsp (1 mL) ground allspice (optional)
… ¼ tsp (1 mL) ground cinnamon (optional)
… ¼ tsp (1 mL) ground cumin
… 1 cup (250 mL) chicken stock or chicken soup mixed with water
… 2 Tbs (25 mL) fresh chopped or frozen fresh dill (optional)

Sprinkle ½ tsp (2 ml) of the salt and pepper all over chicken. In large nonstick skillet, heat half of the oil over medium-high heat, brown chicken, about 10 minutes. Transfer to plate. In same pot sauté onion and garlic for 10 minutes or until brown; adding some oil if needed,. Stir in almonds, craisins and chestnuts; cook, stirring, until nuts darken, about 3 minutes. Add rice, allspice, cinnamon, cumin and remaining salt; cook for 2 minutes, stirring to coat grains.

Add stock and 1-1/4 cups (300 ml) water. Nestle chicken in rice mixture; bring to boil. Reduce heat to low, cover and cook until rice is tender and juices run clear when chicken is pierced, about 30 minutes. Remove from heat; let stand, covered, for 10 minutes. Fluff rice with fork.

This beautiful dessert is a great finish to any meal. Especially on Tu Bishvat, it complements the theme of fruits herein presented. There is a special flan pan that has an indentation, which when inverted allows for the custard and fruit filling. It is available in most houseware or kitchen supply stores. It is a favorite with all ages.

… 6 eggs separated
… 1 cup sugar
… 1 ½ Tbs oil
… ¾ cup orange juice
… 1 package or 1 tsp vanilla sugar
… 1 cup flour
… ½ tsp baking powder
… Custard: 1 whipped cream + 1 vanilla pudding
… Fruit topping (Choose your favorite fruits such as strawberries, kiwis, pineapples, blueberries, tangerines.)

Glaze Ingredients

… ½ cup sugar
… 1 ½ Tbs corn starch
… 1 cup orange juice
… 1Tbs sweet liquor

Preheat oven to 350°. Beat egg whites with sugar until stiff peaks form. In a small bowl, mix flour with baking powder and set aside. On a lower speed, add yolks, oil and orange juice alternating with flour and baking powder mixture.

Oil the flan pan very thoroughly in center and on all sides. Pour in the batter and distribute evenly. Bake for 20 minutes or until toothpick comes out clean.

Allow cake to cool while you prepare the custard. Beat the whipped cream with the vanilla pudding. Invert the cooled cake remove gingerly from the pan so it does not break. Pour custard into the center of the flan and cover with your choice of fruits.

Glaze:

In a small pot, bring the orange juice with all other glaze ingredients to a boil, allowing it to thicken slightly. Smear the glaze over the fruits, for a nice effect. Fruit flan can be refrigerated up to a week.
